Summer days: A birthday party & a Mallorcan recipe


A few weeks ago my cousin Eva, her husband and her son came to spend a few days with us in Barcelona. Since Liam was born they have been able to celebrate his birthday with all of us and it makes me especially happy. This time, with me being heavily pregnant I asked Eva if she could help  with the preparations for the party and she agreed. With my mother and as kitchen helper, the two of them spent all morning cooking delicious things. This year I wanted to bring a pice of Mallorca at the table with some of the most typical dishes from the island. And today I want to share with you the recipe of one of them: coca trempó. It is a salt dough, like a pizza, covered with summer vegetables: onion, tomato and green pepper. It is very easy to make and it is just delicious. 

Hace unas semanas mi prima Eva, su marido y su hijo vinieron a pasar unos días con nosotros en Barcelona. Desde que Liam nació han podido celebrar con nosotros todos sus cumpleaños y me hace especialmente feliz que así sea. Esta vez, con mi embarazo tan avanzado le pedí a Eva si me podía ayudar a preparar la fiesta y ella accedió muy amablemente. Con mi madre como pinche, las dos se pasaron toda la mañana en la cocina preparando cosas deliciosas. Este año me apetecía traer un poco de Mallorca a la mesa con algunos de los platos más típicos de la isla. Y hoy quiero compartir con vosotros la receta de uno de ellos: coca de trempó. Se trata de una masa salada, a modo de pizza, cubierta por hortalizas de verano: cebolla, tomate y pimiento verde. Es muy fácil de hacer y simplemente está buenísima. A mí me apetece a todas horas. 



Steps:

  1. Peel the tomatoes and cut them in small cubes along with the onions and peppers. Mix the vegetales in a bowl and dress them with olive oil and salt. Set aside.
  2. In a different bowl, mix water and sugar and when it is dissolved, add the olive oil and egg. Work the mixture well.
  3. Add flour with yeast until you get a non-stick and shiny dough. 
  4. Extend the dough on a baking tray and cover it with the vegetales.
  5. Bake for 30-40 minutes to médium heat. It can be eaten either hot or cold.


La elaboración es muy sencilla: 

  1. Pelar los tomates y cortarlos a dados pequeños junto con la cebolla y los pimientos verdes. En una ensaladera, mezclarlo todo y aliñarlo con aceite de oliva y sal. Dejar reposar mientras preparamos la masa.
  2. En un bol mezclar bien el agua y el azúcar. Cuando ésta esté bien disuelta, añadimos el aceite de oliva y el huevo. Trabajamos bien esta mezcla.
  3. Vamos incorporando la harina junto con la levadura. Nuestro objetivo es obtener una masa suave y brillante que no sea pegajosa. 
  4. Extendemos la masa con un rodillo en una bandeja de horno sobre papel untado en aceite y cubrimos bien la masa con la mezcla de hortalizas.
  5. Metemos la coca en el horno, precalentado a temperatura media, durante 30-40 minutos. La coca de trempó se puede comer tanto fría como caliente.



Liam´s birthday party was great. It was the first time he was aware that a party was being held in his honor and he was very, very excited. My sister was in charge of the decoration and everything looked beautiful.  The birthday cake has its own story: I wanted to bake a Mallorcan sponge cake and at the moment to put it in the oven it fell to the floor so we had to run to the supermarket and replace it with a Sponge Bob one. Liam was very happy to see his cake and, honestly, I do not think his reaction would had been the same with the one I wanted to bake :S

La fiesta de cumpleaños de Liam fue genial. De la decoración se encargó mi hermana y quedó muy bonita. Y la tarta tiene su historia: yo quería hacer un bizcocho típico de Mallorca, coca de cuarto, y en ello estábamos por la mañana, pero, cuando fuimos a meterla en el horno se nos cayó al suelo!!! De manera que tuvimos que ir corriendo al supermercado a comprar una para la fiesta. Una de esas típicas tartas de cumpleaños con algún dibujo en la cubierta. En este caso era Bob Esponja. Pues a Liam le hizo muchísima ilusión ver una tarta así. Creo sinceramente que no hubiera reaccionado con la misma euforia con la que yo tenía en mente :s
